1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
4 cups broccoli florets
2 cups cubed butternut squash
1 cup shredded cheddar cheese
1/2 cup milk
1/4 cup heavy cream
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup breadcrumbs (optional)
Instructions
Preheat your oven to 375°F (190°C).
Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and cook for 1 minute more until fragrant.
Add broccoli florets and butternut squash to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are slightly tender.
In a separate bowl, whisk together shredded cheddar cheese, milk, heavy cream, salt, and pepper until well combined.
Pour the cheese sauce over the vegetables in the skillet and stir gently to coat.
Transfer the mixture to a baking dish.
If using, sprinkle breadcrumbs evenly over the top.
Bake for 20-25 minutes, or until the casserole is bubbly and the breadcrumbs are golden brown.
Let it rest for a few minutes before serving.
Notes
You can use pre-cut butternut squash to save time.
For a creamier sauce, you can add a tablespoon of butter to the cheese mixture.
Feel free to add other vegetables like carrots or peas.
If you prefer a spicier casserole, add a pinch of cayenne pepper.
