1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, cold and cut into cubes
4-6 tablespoons ice water
1 cup (2 sticks) unsalted butter
1 1/2 cups packed light brown sugar
1/2 teaspoon salt
1 cup light corn syrup
1/4 cup bourbon
4 large eggs, lightly beaten
1 teaspoon vanilla extract
2 1/2 cups pecan halves
Instructions
For the pie crust: In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces of butter. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Form into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
On a lightly floured surface, roll out the dough to a 12-inch circle. Carefully transfer the dough to a 9-inch pie plate. Crimp the edges as desired. Prick the bottom of the crust with a fork. Freeze for 15 minutes.
Preheat your oven to 375°F (190°C).
For the filling: In a large saucepan, melt 1 cup of butter over medium heat. Continue to cook, stirring occasionally, until the butter turns a deep golden brown and smells nutty. Watch carefully to prevent burning. Remove from heat immediately.
Stir in the brown sugar and salt until well combined.
Pour in the corn syrup and bourbon, stirring well.
In a separate bowl, whisk the eggs and vanilla extract. Gradually whisk the warm brown butter mixture into the egg mixture until smooth.
Arrange the pecan halves in the prepared pie crust.
Pour the filling evenly over the pecans.
Bake for 50-60 minutes, or until the filling is set and the crust is golden brown. If the crust edges start to brown too quickly, cover them with foil.
Let the pie cool completely on a wire rack before serving.
Notes
For an extra festive touch, you can add a sprinkle of flaky sea salt on top just before serving.
If you don’t have bourbon, you can substitute it with dark rum or omit it entirely.
Ensure your brown butter doesn’t burn; it should be a rich amber color, not dark brown.
