Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then mix in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Scoop dough portions (about 2 tablespoons each) and flatten one portion slightly in your hand. Place about 1/2 teaspoon of brown sugar filling in the center.
Top with a second, slightly smaller piece of dough. Gently press the edges together to seal the filling inside, forming a cookie shape. You can use a fork to crimp the edges for a classic pastry look.
Place cookies on the prepared baking sheets. Bake for 10 to 12 minutes, or until the edges are lightly golden. The centers should remain soft.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
For the glaze, whisk together the powdered sugar, milk, and vanilla extract until smooth. If the glaze is too thick, add milk a few drops at a time.
Drizzle or spread the glaze over the cooled cookies. Let the glaze set before serving.
Notes
For a quick brown sugar filling, mix 1/4 cup melted butter, 1/2 cup packed brown sugar, and 1 tablespoon flour until smooth. Chill slightly before using.
For a slightly firmer cookie, chill the shaped cookies for 15 minutes before baking.
If you want a thicker glaze, reduce the amount of milk used.
