  • 1 pound Brussels sprouts, trimmed and halved
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Gruyère cheese
  • 1/4 cup breadcrumbs

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
  2. Blanch the Brussels sprouts in boiling water for 3 minutes. Drain well and set aside.
  3. In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly.
  4. Gradually whisk in the milk until the mixture is smooth. Cook, stirring often, until the sauce thickens slightly, about 5-7 minutes.
  5. Remove the saucepan from the heat. Stir in the salt, pepper, and nutmeg.
  6. Add the cheddar cheese and Gruyère cheese to the sauce, stirring until the cheese melts completely and the sauce is smooth.
  7. Gently fold the blanched Brussels sprouts into the cheese sauce.
  8. Pour the mixture into the prepared baking dish.
  9. Sprinkle the breadcrumbs evenly over the top.
  10. Bake for 20-25 minutes, or until the top is golden brown and the sauce is bubbly.
  11. Let it cool for a few minutes before serving.

  • You can blanch the sprouts ahead of time to save a few minutes.
  • Use a mix of your favorite melting cheeses for the best flavor.
  • For extra crunch, toast the breadcrumbs lightly before sprinkling them on top.
