  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 cup cold water (or club soda for extra crispiness)
  • 1/2 cup hot sauce (like Frank’s RedHot)
  • 1/4 cup melted unsalted butter
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, salt, garlic powder, and black pepper.
  3. Pour in the cold water or club soda and whisk until just combined. Do not overmix; lumps are okay. You want a thin batter.
  4. Dip each cauliflower floret into the batter, letting excess drip off. Place the coated florets on the prepared baking sheet in a single layer.
  5. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  6. While the cauliflower bakes, prepare the sauce. In a small saucepan, melt the butter. Remove from heat and stir in the hot sauce and apple cider vinegar.
  7. Once the cauliflower is baked, transfer the hot florets to a large bowl. Pour the buffalo sauce over the cauliflower and toss gently until every piece is coated.
  8. Return the sauced bites to the baking sheet and bake for another 5-10 minutes to set the sauce and make them extra crispy.
