These addictive buffalo cauliflower bites are a delicious vegetarian alternative to traditional wings. They are crispy on the outside and tender on the inside, coated in a tangy and spicy buffalo sauce. Perfect for game day or any occasion when you crave a flavorful snack.

  • 1 medium head cauliflower, cut into florets
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup water
  • 1/2 cup buffalo hot sauce
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon white vinegar
  • 1 teaspoon Worcestershire sauce (optional)
  • Ranch or blue cheese dressing, for serving
  • Celery sticks, for serving

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, garlic powder, paprika, salt, and pepper.
  3. Gradually whisk in the water until you have a smooth batter.
  4. Add the cauliflower florets to the batter and toss to coat them evenly.
  5. Arrange the coated cauliflower on the prepared baking sheet in a single layer.
  6. Bake for 20-25 minutes, or until the cauliflower is golden brown and tender.
  7. While the cauliflower is baking, prepare the buffalo sauce. In a small saucepan, combine the buffalo hot sauce, melted butter, white vinegar, and Worcestershire sauce (if using). Heat over medium heat until warmed through.
  8. Once the cauliflower is baked, remove it from the oven.
  9. In a clean large bowl, toss the baked cauliflower florets with the warm buffalo sauce until well coated.
  10. Return the sauced cauliflower to the baking sheet and bake for another 5-7 minutes, or until the sauce is slightly thickened and clings to the bites.
  11. Serve immediately with ranch or blue cheese dressing and celery sticks.

Notes

  • For an extra crispy bite, you can double-bake the cauliflower. Bake for 15 minutes, then remove from oven, dip into the batter again, and bake for another 15-20 minutes.
  • Adjust the amount of hot sauce to your spice preference.
  • You can use gluten-free flour for a gluten-free version.
