  • 1 head cauliflower, cut into florets
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup milk
  • 1/2 cup buffalo wing sauce
  • 2 tablespoons melted butter
  • 2 tablespoons chopped fresh parsley, for garnish (optional)
  • Ranch or blue cheese dressing, for serving (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, paprika, garlic powder, onion powder, salt, and pepper.
  3. Pour the milk into a separate bowl. Dip each cauliflower floret into the milk, letting any excess drip off, then toss it in the flour mixture, ensuring it’s fully coated.
  4. Place the coated cauliflower florets on the prepared baking sheet in a single layer.
  5. Bake for 20-25 minutes, or until the cauliflower is tender and lightly golden.
  6. While the cauliflower is baking, whisk together the buffalo wing sauce and melted butter in a medium bowl.
  7. Once the cauliflower is done, carefully add the baked florets to the bowl with the buffalo sauce mixture. Toss gently to coat evenly.
  8. Return the coated cauliflower to the baking sheet and bake for another 5-10 minutes, or until the sauce is slightly caramelized and bubbly.
  9. Garnish with fresh parsley if desired. Serve immediately with ranch or blue cheese dressing.

Notes

  • For extra crispiness, you can double-coat the cauliflower. Dip in milk, then flour, then back into milk, and finally into flour again.
  • Adjust the amount of buffalo wing sauce to your preferred spice level.
  • If you don’t have buffalo wing sauce, you can make your own by combining hot sauce (like Frank’s RedHot) and melted butter.
