Spicy buffalo cauliflower florets baked until tender and slightly crispy, then tucked into warm tortillas with your favorite taco toppings. These plant-based tacos are a quick and flavorful meal perfect for any night of the week.

Ingredients

  • 1 head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1/2 cup buffalo hot sauce
  • 2 tablespoons vegan butter, melted
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt to taste
  • 8 small corn or flour tortillas
  • Optional Toppings: shredded lettuce, diced tomatoes, red onion, cilantro, vegan sour cream, avocado

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the cauliflower florets with olive oil, salt, garlic powder, and onion powder until evenly coated.
  3. Spread the cauliflower in a single layer on the prepared baking sheet.
  4. Roast for 20 minutes, or until the cauliflower is tender and slightly browned.
  5. While the cauliflower is roasting, whisk together the buffalo hot sauce and melted vegan butter in a small bowl.
  6. Once the cauliflower is roasted, remove it from the oven. Add the buffalo sauce mixture to the bowl with the cauliflower and toss gently to coat.
  7. Return the cauliflower to the baking sheet and roast for another 5-7 minutes, until the sauce is slightly thickened and caramelized.
  8. Warm the tortillas according to package directions.
  9. Fill the warm tortillas with the buffalo cauliflower. Add your favorite toppings.

Notes

  • For extra crispy cauliflower, you can broil it for the last 1-2 minutes, watching carefully to prevent burning.
  • Adjust the amount of hot sauce to your spice preference.
  • If you don’t have vegan butter, you can use regular butter or omit it.
