  • 2 large sweet potatoes
  • 1 cup cooked shredded chicken
  • 1/4 cup buffalo sauce
  • 2 tablespoons cream cheese, softened
  • 1/4 cup blue cheese crumbles (optional)
  • 2 tablespoons chopped green onions
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes and prick them all over with a fork.
  3. Rub the sweet potatoes with olive oil, salt, and pepper.
  4. Bake for 45-60 minutes, or until tender.
  5. While the sweet potatoes are baking, mix the shredded chicken with buffalo sauce and cream cheese in a bowl until well combined.
  6. Once the sweet potatoes are tender, let them cool slightly.
  7. Cut each sweet potato lengthwise and scoop out some of the flesh, leaving a border to create a “boat”.
  8. Mash the scooped-out sweet potato flesh and mix it into the buffalo chicken mixture.
  9. Spoon the buffalo chicken filling back into the sweet potato boats.
  10. Top with blue cheese crumbles (if using) and chopped green onions.
  11. Return to the oven for 5-10 minutes, or until heated through and the cheese is melted.

Notes

  • You can adjust the amount of buffalo sauce to your spice preference.
  • For a dairy-free option, omit the cream cheese and blue cheese.
  • Leftover filling can be served on its own or with crackers.
