1 large egg, beaten
1/2 cup panko breadcrumbs

1/2 cup buffalo wing sauce (medium heat)
1/4 cup ranch dressing
4 large flour tortillas
1 cup shredded romaine lettuce
1/2 cup diced celery
1/4 cup crumbled blue cheese (optional)
Instructions
If using raw chicken, cut it into bite-sized pieces. Toss the chicken pieces with flour, salt, and pepper.
Dip the floured chicken into the beaten egg, then press firmly into the panko breadcrumbs to coat completely.
Heat the vegetable oil in a skillet over medium-high heat. Cook the breaded chicken for 4-5 minutes per side until golden brown and cooked through.
In a bowl, toss the hot, crispy chicken with the buffalo wing sauce until fully coated.
In a separate small bowl, mix the ranch dressing with the blue cheese crumbles, if using.
Warm the flour tortillas briefly in a dry skillet or microwave to make them pliable.
To assemble, lay a tortilla flat. Layer lettuce, the sauced chicken, diced celery, and a drizzle of the creamy ranch mixture down the center.
Fold in the sides of the tortilla, then roll tightly from the bottom up to create a secure wrap. Slice in half and serve immediately.
