Make this fresh, crisp cabbage salad tossed in a light, tangy vinaigrette. It is a quick and healthy side dish perfect for BBQs, picnics, or weeknight dinners.

  • 1 small head green cabbage, thinly shredded
  • 1/2 small head red cabbage, thinly shredded
  • 2 medium carrots, shredded or julienned
  • 1/4 cup apple cider vinegar
  • 3 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Prepare the vegetables: Thinly shred the green and red cabbage. Shred or julienne the carrots. Place all shredded vegetables into a large mixing bowl.
  2. Make the zesty vinaigrette: In a small bowl, whisk together the apple cider vinegar, olive oil, Dijon mustard, honey or maple syrup, salt, and pepper until well combined.
  3. Dress the salad: Pour the vinaigrette over the shredded vegetables. Toss everything together until the vegetables are evenly coated.
  4. Add herbs: Stir in the chopped fresh parsley.
  5. Chill (optional but recommended): Cover the bowl and refrigerate the salad for at least 15 minutes. This allows the flavors to meld and helps the cabbage soften slightly while keeping its crunch.
  6. Serve: Taste and adjust seasoning if needed before serving your refreshing salad.

Notes

  • For extra crunch, add 1/4 cup of toasted sunflower seeds or slivered almonds just before serving.
  • If you want a heartier meal, add 1 cup of cooked, shredded chicken or chickpeas to make this a main dish cabbage salad.
