1/2 small head red cabbage, thinly shredded
2 medium carrots, shredded or julienned
1/4 cup apple cider vinegar
3 tablespoons olive oil
1 tablespoon Dijon mustard
1 tablespoon honey or maple syrup
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup fresh parsley, chopped
Instructions
Prepare the vegetables: Thinly shred the green and red cabbage. Shred or julienne the carrots. Place all shredded vegetables into a large mixing bowl.
