A spicy and flavorful one-pot Cajun Jambalaya featuring sausage, shrimp, and a rich blend of Creole spices. This easy-to-make dish brings the taste of Louisiana right to your kitchen.

  • 1 tbsp olive oil
  • 1 lb andouille sausage, sliced
  • 1 lb shrimp, peeled and deveined
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 2 cups uncooked white rice
  • 1 tsp Cajun seasoning
  • 1/2 tsp dried thyme
  • 1/4 tsp cayenne pepper (optional)
  • Salt and black pepper to taste
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add sliced andouille sausage and cook until browned. Remove sausage with a slotted spoon and set aside.
  2. Add shrimp to the same pot and cook for 1-2 minutes per side, until pink. Remove shrimp and set aside with the sausage.
  3. Add chopped onion, bell pepper, and celery to the pot. Cook until softened, about 5-7 minutes.
  4. Stir in minced garlic and cook for 1 minute more until fragrant.
  5. Pour in diced tomatoes and chicken broth. Bring to a boil.
  6. Stir in uncooked rice, Cajun seasoning, thyme, and cayenne pepper (if using).
  7. Return the cooked sausage to the pot.
  8. Reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked and liquid is absorbed.
  9. Stir in the cooked shrimp and cook for a few minutes until heated through.
  10. Season with salt and black pepper to taste.
  11. Garnish with sliced green onions before serving.

Notes

  • For a spicier jambalaya, add more cayenne pepper or a dash of hot sauce.
  • You can substitute chicken or pork for the sausage.
  • Feel free to add other vegetables like corn or peas.
