  • 4 cups water
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1/2 cup chopped yellow onion
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped red bell pepper
  • 2 cloves garlic, minced
  • 1/2 teaspoon Cajun seasoning
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Bring water and milk to a boil in a medium saucepan.
  2. Whisk in grits, salt, and pepper. Reduce heat to low, cover, and simmer for 20-25 minutes, or until thickened, stirring occasionally.
  3. Stir in butter, cheddar cheese, and Parmesan cheese until smooth and creamy.
  4. While grits are cooking, heat olive oil in a large skillet over medium-high heat.
  5. Add shrimp, onion, and bell peppers. Cook for 3-5 minutes, until shrimp are pink and vegetables are tender-crisp.
  6. Stir in garlic, Cajun seasoning, and cayenne pepper (if using). Cook for 1 minute more until fragrant.
  7. Spoon grits into bowls. Top with shrimp mixture. Garnish with parsley.

Notes

  • For richer grits, you can use half-and-half or heavy cream instead of milk.
  • Adjust the amount of cayenne pepper to control the spice level.
  • You can add other vegetables like mushrooms or corn to the shrimp mixture.
