  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1/2 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste
  • 2 cups water
  • 1 cup stone-ground grits
  • 1/2 teaspoon salt
  • 4 tablespoons butter
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese

Instructions

  1. In a medium bowl, toss the shrimp with Cajun seasoning. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 1-2 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  3. Add the chopped onion to the same skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Stir in the diced tomatoes (with their juice) and chicken broth. Bring to a simmer and cook for 5 minutes, allowing the flavors to meld.
  5. Reduce heat to medium-low. Stir in the heavy cream and parsley. Return the cooked shrimp to the skillet. Season with salt and pepper to taste. Keep warm over low heat.
  6. In a medium saucepan, bring 2 cups of water and 1/2 teaspoon salt to a boil.
  7. Gradually whisk in the grits. Reduce heat to low, cover, and cook, stirring occasionally, until tender, about 20-25 minutes.
  8. Stir in the butter, cheddar cheese, and Monterey Jack cheese until melted and smooth. Season with additional salt and pepper if needed.
  9. To serve, spoon the cheesy grits into bowls and top with the Cajun shrimp mixture.

Notes

  • For an extra kick, add a pinch of cayenne pepper to the shrimp.
  • If you don’t have stone-ground grits, regular grits can be used, but cooking times may vary.
  • Feel free to add other vegetables like bell peppers or corn to the shrimp mixture.
