  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1 tablespoon chopped fresh parsley
  • 1 cup instant grits
  • 2 cups water
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons butter

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season shrimp with salt, black pepper, and cayenne pepper.
  3. Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  4. Add chopped onion to the skillet and cook until softened, about 3-4 minutes.
  5. Add minced garlic and cook for 1 minute more, until fragrant.
  6. Pour in chicken broth and heavy cream, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.
  7. Stir in cooked shrimp and chopped parsley. Keep warm over low heat.
  8. Meanwhile, prepare the grits according to package directions using water.
  9. Once grits are cooked, stir in shredded cheddar cheese and butter until melted and creamy.
  10. Serve the Cajun shrimp mixture over the cheesy grits.

Notes

  • For extra spice, add more cayenne pepper.
  • You can substitute milk for heavy cream if preferred.
  • Other cheeses like Gruyere or Monterey Jack can be used instead of cheddar.
  • Garnish with extra parsley or a dash of hot sauce if desired.
