2 ripe Avocados
1 cup Cherry Tomatoes, halved
8 oz Fresh Mozzarella balls (Bocconcini), halved or quartered
1/4 cup Fresh Basil leaves, chopped
2 Tbsp Extra Virgin Olive Oil
1 Tbsp Balsamic Glaze
Salt, to taste
Black Pepper, freshly ground, to taste
Instructions
Slice each avocado in half lengthwise and remove the pit.
Gently scoop out a small amount of the avocado flesh from the center of each half to create a larger well for stuffing. Reserve the scooped avocado if desired for another use.
In a medium bowl, combine the halved cherry tomatoes, mozzarella pieces, and chopped basil.
Drizzle the tomato and mozzarella mixture with olive oil. Season lightly with salt and pepper. Gently toss to coat.
Spoon the Caprese mixture evenly into the wells of the four avocado halves. Mound the filling slightly.
Drizzle the top of each stuffed avocado half with balsamic glaze.
Serve immediately and enjoy your beautiful, fresh lunch.
Notes
For an extra layer of flavor, you can lightly toast the avocado halves cut-side down for 2-3 minutes before stuffing.
If you do not have balsamic glaze, you can reduce balsamic vinegar in a small saucepan until it thickens slightly.
You can substitute small balls of burrata for the mozzarella for a creamier texture.
