  • 4 large portobello mushrooms, stems removed and gills scraped
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, halved
  • 4 ounces fresh mozzarella, diced
  • 1/4 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons balsamic glaze

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brush the portobello mushroom caps with olive oil.
