Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Melt the butter and olive oil in a large skillet over medium heat.
  3. Add the sliced onions, salt, and pepper. Cook slowly, stirring occasionally, for 30 to 40 minutes until the onions are deeply golden brown and sweet.
  4. While the onions cook, lightly whisk the heavy cream and egg together in a small bowl.
  5. Unroll the puff pastry onto the prepared baking sheet. Score a 1-inch border around the edge of the pastry, being careful not to cut all the way through.
  6. Spread the caramelized onions evenly inside the scored border.
  7. Sprinkle the Gruyère cheese over the onions.
  8. Pour the cream and egg mixture gently over the onions and cheese.
  9. Bake for 20 to 25 minutes, or until the pastry is puffed and golden brown.
