These no-bake carrot cake energy bites are a healthy and delicious snack. They are packed with flavor from carrots, oats, and warm spices, making them a perfect grab-and-go option.

  • 1/2 cup shredded carrots
  • 1/4 cup chopped walnuts or pecans
  • 1/4 cup shredded unsweetened coconut
  • 2 tablespoons chia seeds
  • 1/4 cup almond butter or peanut butter
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Pinch of salt

Instructions

  1. In a medium bowl, combine the rolled oats, shredded carrots, chopped nuts, shredded coconut, chia seeds, cinnamon, nutmeg, and salt.
  2. Add the almond butter (or peanut butter), maple syrup (or honey), and vanilla extract to the bowl.
  3. Stir everything together until well combined. The mixture should be slightly sticky and hold together when pressed.
  4. Roll the mixture into small balls, about 1 inch in diameter.
