  • 1 tablespoon sesame oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup chopped bell pepper (any color)
  • 1 cup frozen peas and carrots
  • 4 cups riced cauliflower
  • 2 tablespoons soy sauce or tamari
  • 1 teaspoon grated fresh ginger
  • 1 large egg, lightly beaten
  • Optional: cooked protein like chicken or shrimp

Instructions

  1. Heat sesame oil in a large skillet or wok over medium-high heat.
  2. Add onion and cook until softened, about 3 minutes.
  3. Add garlic and bell pepper, cook for another 2 minutes.
  4. Stir in frozen peas and carrots, and cook until heated through.
  5. Add riced cauliflower and ginger to the skillet. Stir-fry for 5-7 minutes, or until the cauliflower is tender-crisp.
  6. Push the cauliflower mixture to one side of the skillet. Pour the beaten egg onto the empty side and scramble until cooked.
  7. Mix the scrambled egg with the cauliflower mixture.
  8. Stir in soy sauce or tamari. If using, add cooked protein.
  9. Serve hot and enjoy!

Notes

  • For best results, make sure your riced cauliflower is dry. You can pat it down with paper towels after processing.
  • Adjust soy sauce or tamari to your taste.
  • Feel free to add other vegetables like broccoli florets or mushrooms.
