Ingredients

  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1 cup chopped broccoli florets
  • 1 cup frozen peas and carrots
  • 4 cups cauliflower rice
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon sesame oil
  • 2 large eggs, beaten
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat. Add shrimp and cook until pink and cooked through, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
  2. Add onion to the skillet and cook until softened, about 3 minutes. Add garlic and cook for 1 minute more, until fragrant.
  3. Stir in broccoli florets and frozen peas and carrots. Cook for 5 minutes, until vegetables are tender-crisp.
  4. Add cauliflower rice to the skillet and cook, stirring occasionally, until slightly softened, about 5-7 minutes.
  5. Push cauliflower rice and vegetables to one side of the skillet. Pour beaten eggs into the empty side and scramble until cooked through.
  6. Stir the scrambled eggs into the cauliflower rice mixture.
  7. Return the cooked shrimp to the skillet. Add soy sauce (or tamari) and sesame oil. Stir everything together until well combined and heated through.
  8. Season with salt and black pepper to taste. Serve immediately.

Notes

  • For a spicier kick, add a pinch of red pepper flakes with the garlic.
  • You can substitute chicken or tofu for shrimp.
  • Feel free to add other vegetables like bell peppers or snap peas.
