1 cup unsalted butter, softened
3/4 cup granulated sugar
3/4 cup packed light brown sugar
1 large egg
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground cardamom
1/2 teaspoon ground cloves
1/4 teaspoon ground black pepper
1/4 cup granulated sugar, for rolling
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the egg and vanilla extract until just combined.
In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, cardamom, cloves, and black pepper.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just incorporated. Do not overmix.
Place the remaining 1/4 cup of sugar in a shallow dish.
Roll the dough into 1-inch balls. Roll each ball thoroughly in the sugar coating.
Place the coated dough balls onto the prepared baking sheets, about 2 inches apart.
Bake for 10 to 12 minutes, or until the edges are set and the centers look slightly soft.
Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For the strongest chai flavor, use freshly ground spices if possible.
If you like a chewier cookie, slightly underbake them.
