  • 1.5 lbs ground beef (80/20 recommended)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 4 slices cheddar cheese
  • 4 cups shredded iceberg or romaine lettuce
  • 1/2 cup dill pickle slices
  • 1/4 cup diced red onion
  • 1/4 cup cherry tomatoes, halved
  • Optional toppings: Bacon bits, mustard, ketchup (check carb count)

Instructions

  1. In a medium bowl, combine the ground beef with salt, pepper, garlic powder, and onion powder. Mix gently with your hands until just combined.
  2. Divide the meat mixture into four equal portions and form them into patties, slightly thinner than you might for a regular burger, as they will shrink.
  3. Heat a large skillet over medium-high heat. Cook the patties for 4 to 5 minutes per side, or until they reach your desired doneness.
  4. During the last minute of cooking, place one slice of cheddar cheese on top of each patty and cover the skillet briefly to allow the cheese to melt completely.
  5. While the beef cooks, prepare the base: Divide the shredded lettuce among four serving bowls.
  6. Assemble the bowls: Place one cheesy beef patty on top of the lettuce in each bowl.
  7. Top each bowl with pickle slices, diced red onion, and halved cherry tomatoes.
  8. Drizzle generously with your favorite burger sauce (recipe below or store-bought). Serve immediately for a satisfying, high-protein dinner.

  • For meal prep, cook the beef and store the sauce separately. Assemble the bowls just before eating to keep the lettuce crisp.
  • Swap ground beef for ground turkey or chicken if you prefer a different protein source.
  • This recipe is naturally gluten free. For a keto cheeseburger bowl, skip any sugary ketchup in your sauce.
