  • 1 large head of cauliflower, cut into small florets
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream
  • 1/2 cup chicken broth (or vegetable broth)
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • 2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup shredded Gruyère cheese (optional, for extra flavor)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
  2. Toss the cauliflower florets with olive oil, salt, and pepper in a large bowl. Spread them in a single layer on a baking sheet.
  3. Roast the cauliflower for 15 minutes until slightly tender.
  4. While the cauliflower roasts, prepare the cheese sauce. In a medium saucepan over medium heat, whisk together the heavy cream, chicken broth, Dijon mustard, and garlic powder.
  5. Bring the mixture to a gentle simmer, stirring constantly. Reduce the heat to low.
  6. Stir in 1.5 cups of the cheddar cheese and all of the Gruyère cheese (if using) until smooth and melted. Do not let it boil.
  7. Place the roasted cauliflower into the prepared baking dish.
  8. Pour the cheese sauce evenly over the cauliflower. Gently toss to coat everything.
  9. Sprinkle the remaining 1/2 cup of cheddar cheese over the top. This is what gives you that golden crust!
  10. Bake for 20 to 25 minutes, or until the sauce is bubbly and the top is deeply golden brown.
  11. Let it cool for 5 minutes before serving. Enjoy your bubbly, golden bake!

Notes

  • For a crispier top, you can place the dish under the broiler for the last 1-2 minutes, watching closely so it does not burn.
  • You can substitute other low-carb vegetables like broccoli florets if you wish.
  • If you prefer a thicker sauce, cook the cream mixture a few minutes longer before adding cheese.
