Make this Cheesy Loaded Meatloaf Casserole for a comforting, family-friendly dinner. Baking it in a casserole dish keeps it moist and makes cleanup simple. You get all the flavor of classic meatloaf with a cheesy topping.

  • 2 pounds ground beef (80/20 recommended)
  • 1 cup breadcrumbs
  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • 1/2 cup finely chopped onion
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the ground beef, breadcrumbs, egg, milk, onion, ketchup, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix gently with your hands until just combined. Do not overmix.
  3. Spread the meat mixture evenly into the prepared baking dish.
  4. Bake for 30 minutes.
  5. While the meatloaf bakes, combine the cheddar and Monterey Jack cheeses in a small bowl.
  6. Remove the casserole from the oven. Sprinkle the cheese mixture evenly over the top of the partially cooked meatloaf.
  7. Return the casserole to the oven and bake for another 10 to 15 minutes, or until the cheese is melted and bubbly and the meatloaf is cooked through (internal temperature reaches 160 degrees F or 71 degrees C).
  8. Let the meatloaf casserole rest for 5 minutes before slicing and serving.

Notes

  • For an even heartier meal, layer thinly sliced, pre-cooked potatoes over the meat mixture before adding the cheese.
  • You can prepare the entire meat mixture and press it into the dish ahead of time. Cover and refrigerate for up to 24 hours before baking. Add 5-10 minutes to the initial bake time if cooking straight from the refrigerator.
  • Use half ground beef and half ground pork or turkey for a slightly different flavor profile.
