Ingredients

Scale
  • 1 pound egg noodles
  • 2 tablespoons butter
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1/2 cup all-purpose flour
  • 3 cups milk
  • 2 cans (5 ounces each) tuna, drained and flaked
  • 1 cup frozen peas
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces shredded cheddar cheese, divided

Instructions

  1. Preheat your oven to 375°F (190°C). Cook egg noodles according to package directions. Drain and set aside.
  2. In a large saucepan, melt butter over medium heat. Add onion and celery and cook until softened, about 5-7 minutes.
  3. Whisk in the flour and cook for 1 minute, stirring constantly. Gradually whisk in the milk until smooth. Cook, stirring, until the sauce thickens.
  4. Stir in the drained tuna, frozen peas, salt, and pepper. Remove from heat.
  5. Stir in 4 ounces of cheddar cheese and 2 ounces of Monterey Jack cheese until melted and smooth.
  6. Add the cooked egg noodles to the cheese sauce and stir to combine.
  7. Pour half of the noodle mixture into a greased 9×13 inch baking dish. Sprinkle with 2 ounces of cheddar cheese and 2 ounces of Monterey Jack cheese.
  8. Top with the remaining noodle mixture. Sprinkle with the remaining 4 ounces of cheddar cheese.
  9. Bake for 20-25 minutes, or until bubbly and golden brown on top. Let stand for 5 minutes before serving.
