1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup slivered almonds
1/2 cup dried cherries, roughly chopped
1/4 teaspoon almond extract
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large bowl, beat the sugar and eggs until light and fluffy. Mix in the vanilla extract and almond extract.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the slivered almonds and chopped dried cherries.
Turn the dough out onto a lightly floured surface. Gently form the dough into a log, about 10 inches long and 2 inches wide.
Place the log on the prepared baking sheet. Bake for 25 to 30 minutes, until the log is golden brown and firm to the touch.
Remove from the oven and let cool on the baking sheet for 10 minutes.
Slice the warm log diagonally into 1/2-inch thick pieces.
Lay the slices cut-side down on the baking sheet. Bake for another 10 to 15 minutes, flipping halfway through, until the biscotti are dry and lightly toasted.
Cool completely before serving.
Notes
For extra crunch, toast the slivered almonds lightly before adding them to the dough.
You can substitute dried cranberries or pecans for the cherries and almonds if you wish.
Store completely cooled biscotti in an airtight container at room temperature for up to two weeks.
