- 1/4 cup chia seeds
- 1 cup milk (dairy or non-dairy)
- 1 tablespoon sweetener (maple syrup or honey, adjust to taste)
- 1/2 teaspoon vanilla extract (optional)
- Combine the chia seeds, milk, sweetener, and vanilla extract (if using) in a jar or container.
- Stir the mixture well for about one minute to prevent the seeds from clumping at the bottom.
- Let the mixture sit for 5 minutes, then stir again thoroughly. This second stir is important for a smooth texture.
- Cover the container and refrigerate for at least 4 hours, or preferably overnight, until the pudding thickens.
- Stir before serving. Add your preferred toppings.
Notes
- For a creamier texture, use full-fat coconut milk or oat milk.
- If the pudding is too thick after refrigeration, stir in a splash more milk until you reach your desired consistency.
- To make chocolate pudding, add 1 tablespoon of unsweetened cocoa powder with the other ingredients.
