A simple recipe for making creamy, healthy chia seed pudding using a basic liquid and sweetener base.

Ingredients

  • 1/4 cup chia seeds
  • 1 cup milk (dairy or non-dairy)
  • 1 tablespoon sweetener (maple syrup or honey, adjust to taste)
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Combine the chia seeds, milk, sweetener, and vanilla extract (if using) in a jar or container.
  2. Stir the mixture well for about one minute to prevent the seeds from clumping at the bottom.
  3. Let the mixture sit for 5 minutes, then stir again thoroughly. This second stir is important for a smooth texture.
  4. Cover the container and refrigerate for at least 4 hours, or preferably overnight, until the pudding thickens.
  5. Stir before serving. Add your preferred toppings.

Notes

  • For a creamier texture, use full-fat coconut milk or oat milk.
  • If the pudding is too thick after refrigeration, stir in a splash more milk until you reach your desired consistency.
  • To make chocolate pudding, add 1 tablespoon of unsweetened cocoa powder with the other ingredients.
