Ingredients

Scale
  • 1 box jumbo pasta shells
  • 1 pound cooked, shredded chicken breast
  • 15 ounces ricotta cheese
  • 1 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 1 cup Alfredo sauce (store-bought or homemade)
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 cups shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Cook the jumbo pasta shells according to package directions until al dente. Drain them well and set aside.
  3. In a large bowl, combine the shredded chicken, ricotta cheese, Parmesan cheese, heavy cream, Alfredo sauce, and garlic powder. Mix gently until everything is well incorporated and creamy. Season with salt and pepper.
  4. Carefully stuff each cooked pasta shell with the chicken Alfredo filling. You can use a small spoon or your fingers.
  5. Arrange the stuffed shells in a single layer in the prepared baking dish.
  6. Pour any remaining filling mixture over the top of the shells, if desired.
  7. Sprinkle the mozzarella cheese evenly over the shells.
  8. Bake for 20 to 25 minutes, or until the cheese is melted, bubbly, and lightly golden brown.
  9. Let the dish rest for about 5 minutes before serving. Garnish with fresh parsley.

Notes

  • You can use rotisserie chicken to save time on cooking the chicken breast.
  • For an extra layer of flavor, stir a pinch of nutmeg into the filling mixture.
  • If the sauce seems too thick, add a tablespoon or two of milk or reserved pasta water while mixing the filling.
