  • 1 lb boneless, skinless chicken breast, thinly sliced
  • 8 oz dried egg noodles
  • 2 tablespoons soy sauce, divided
  • 1 teaspoon cornstarch
  • 2 tablespoons vegetable oil, divided
  • 1 cup shredded cabbage
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 4 green onions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup chicken broth
  • 2 tablespoons oyster sauce
  • 1 tablespoon dark soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar

Instructions

  1. Toss the sliced chicken with 1 tablespoon of soy sauce and cornstarch. Set aside for 10 minutes.
  2. Cook the egg noodles according to package directions until tender but still firm. Drain the noodles and toss with 1 teaspoon of sesame oil to prevent sticking.
  3. In a small bowl, whisk together the chicken broth, remaining 1 tablespoon of soy sauce, oyster sauce, dark soy sauce, and sugar to make the sauce.
  4. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and stir fry until cooked through and lightly browned, about 4-5 minutes. Remove the chicken and set it aside.
  5. Add the remaining 1 tablespoon of oil to the skillet. Add carrots, cabbage, and celery. Stir fry for 3 minutes until the vegetables begin to soften but remain crisp.
  6. Add the minced garlic and grated ginger to the vegetables. Cook for 30 seconds until fragrant.
  7. Return the cooked chicken to the skillet. Pour the prepared sauce over the chicken and vegetables. Toss to coat.
  8. Add the cooked noodles and chopped green onions to the skillet. Toss everything together quickly until the noodles are heated through and coated evenly with the sauce, about 1-2 minutes.
  9. Serve immediately.

  • For crispier vegetables, increase the heat slightly when stir-frying the vegetables.
  • You can substitute chicken thighs for breasts if you prefer darker meat.
  • Use fresh ginger for the best flavor in the sauce.
