2 large bell peppers, halved lengthwise, seeds removed
1 pound boneless, skinless chicken breast, cut into small pieces
1 tablespoon olive oil
1 small onion, sliced
1 small bell pepper (any color), sliced
1 packet fajita seasoning
1/2 cup salsa
1/2 cup shredded cheddar cheese (optional)
Instructions
Preheat your oven to 375°F (190°C).
Place the halved bell peppers cut-side up in a baking dish.
In a skillet, heat the olive oil over medium-high heat. Add the chicken pieces and cook until browned.
Add the sliced onion and bell pepper to the skillet. Cook until softened, about 5 minutes.
Stir in the fajita seasoning and salsa. Cook for another 2 minutes, stirring to coat everything evenly.
Spoon the chicken and vegetable mixture into the bell pepper halves.
Cover the baking dish with foil and bake for 25-30 minutes, or until the peppers are tender.
If using, sprinkle cheese over the top during the last 5 minutes of baking.
Serve warm and enjoy!

You can adjust the fajita seasoning to your spice preference.
Feel free to add other vegetables like mushrooms or corn.
