1 tablespoon vegetable oil
1 cup diced cooked chicken
1/2 cup chopped yellow onion
1/2 cup chopped carrots
1/2 cup frozen peas
2 cloves garlic, minced
1 teaspoon grated fresh ginger
2 cups cooked and cooled rice
2 tablespoons soy sauce
1 teaspoon sesame oil
1 large egg, lightly beaten
Instructions
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add diced chicken and cook until browned.
Add onion and carrots, and cook until tender-crisp.
Stir in peas, garlic, and ginger. Cook for 1 minute more until fragrant.
Push the vegetables to one side of the skillet. Pour the beaten egg into the empty space and cook, stirring, until scrambled.
Add the cooked rice to the skillet. Break up any clumps.
Pour soy sauce and sesame oil over the rice and vegetables. Stir well to combine and heat through.
Serve hot.
Notes
Use day-old rice for best results.
You can substitute shrimp or pork for chicken.
Add other vegetables like corn or bell peppers if desired.
