1.5 pounds boneless, skinless chicken breasts or thighs
1 teaspoon dried thyme
1 bay leaf
1/2 teaspoon dried rosemary
Salt and black pepper to taste
12 ounces wide egg noodles
1/4 cup fresh parsley, chopped
Instructions
Heat the olive oil in a large stockpot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Sauté for 5 to 7 minutes until the vegetables begin to soften.
Add the chicken broth, raw chicken pieces, thyme, bay leaf, and rosemary to the pot. Season generously with salt and pepper.
Bring the mixture to a boil, then immediately reduce the heat to low, cover the pot, and simmer for 15 to 20 minutes, or until the chicken is fully cooked through.
Carefully remove the cooked chicken from the pot and set it aside on a cutting board to cool slightly. Leave the broth simmering gently.
Once the chicken is cool enough to handle, shred it using two forks. Discard the bay leaf from the broth.
Increase the heat to medium and add the egg noodles to the simmering broth. Cook according to package directions, usually 6 to 8 minutes, until they are tender.
Return the shredded chicken to the pot. Stir well and cook for 2 more minutes to heat the chicken through.
Taste the soup and adjust salt and pepper as needed. Stir in the fresh parsley just before serving.

If you are short on time, you can use a rotisserie chicken hack: skip step 1 and 4, add pre-cooked shredded rotisserie chicken in step 6, and simmer for only 5 minutes to heat through.
This soup freezes well. If freezing, cook the noodles separately and add them when reheating to prevent them from becoming too soft.
