4 boneless, skinless chicken breasts, pounded to 1/2 inch thickness
1 cup all-purpose flour
2 large eggs, beaten
1 1/2 cups Panko breadcrumbs
1/2 cup grated Parmesan cheese, plus more for topping
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
2 cups marinara sauce
8 ounces fresh mozzarella cheese, sliced
Fresh basil, chopped, for garnish
Instructions
Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper.
Set up a standard breading station with three shallow dishes. Place flour in the first dish. Whisk eggs in the second dish. In the third dish, combine Panko breadcrumbs, 1/2 cup Parmesan cheese, oregano, garlic powder, salt, and pepper.
Dredge each pounded chicken cutlet first in the flour, shaking off excess. Then dip it completely in the beaten egg, letting excess drip off. Finally, press the cutlet firmly into the Panko mixture to coat both sides completely.
Heat the olive oil in a large skillet over medium-high heat. Pan-fry the breaded cutlets for 2 minutes per side until golden brown. This step helps set the crust for crispiness. You may need to work in batches.
Place the browned cutlets on the prepared baking sheet. Spoon about 1/4 cup of marinara sauce over each cutlet.
Top each cutlet with slices of fresh mozzarella cheese. Sprinkle a little extra grated Parmesan over the cheese.
Bake for 12 to 15 minutes, or until the chicken is cooked through (internal temperature reaches 165°F) and the cheese is melted and bubbly.
Garnish with fresh basil before serving. Serve immediately, often with pasta tossed in remaining marinara sauce.
Notes
For extra crispiness, place the baking sheet in the oven while preheating.
Use Panko breadcrumbs; they absorb less oil and create a lighter, crunchier crust than regular breadcrumbs.
If you prefer a saucier top, add more marinara sauce before the final bake.
