2 cups cooked, shredded chicken
1 cup shredded Monterey Jack cheese
1 cup shredded cheddar cheese
4 large flour tortillas
1 tablespoon butter or oil
Instructions
Mix the shredded chicken and both cheeses together in a bowl. This is your cheesy chicken filling.
Place a large skillet over medium heat and add half of the butter or oil.
Place one tortilla in the hot skillet. Spread half of the cheese and chicken mixture evenly over one half of the tortilla.
Fold the empty half of the tortilla over the filling to create a half-moon shape.
Cook for 3 to 4 minutes per side, pressing down gently with a spatula, until the tortilla is golden brown and the cheese is fully melted.
Remove the first quesadilla from the skillet and keep it warm. Repeat the process with the remaining ingredients, adding more butter or oil to the skillet as needed.
Cut each quesadilla into wedges before serving.
Notes
For extra flavor, mix 1 teaspoon of taco seasoning into the chicken filling.
If you want a crispier tortilla, cook over slightly lower heat for a longer time.
