1 pound dried pasta (penne or rotini)
1 tablespoon olive oil
1 pound pre-cooked chicken sausage, sliced
1 small yellow onion, chopped
3 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cups fresh spinach
1/2 cup sun-dried tomatoes, drained and chopped
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Cook the pasta according to package directions until al dente. Reserve 1/2 cup of the pasta water before draining. Set the drained pasta aside.
Heat the olive oil in a large skillet over medium heat. Add the sliced chicken sausage and cook until lightly browned, about 3 to 4 minutes. Remove the sausage from the skillet and set aside.
Add the chopped onion to the same skillet and cook until soft, about 3 minutes. Add the minced garlic and cook for 1 minute until fragrant.
Pour in the chicken broth and bring it to a simmer. Stir in the heavy cream, Italian seasoning, salt, and pepper. Let the sauce simmer gently for 2 minutes, stirring occasionally.
Stir in the Parmesan cheese until the sauce thickens slightly. If the sauce is too thick, add a splash of the reserved pasta water.
Add the spinach and sun-dried tomatoes to the skillet. Cook until the spinach wilts, about 1 minute.
Return the cooked sausage and the drained pasta to the skillet. Toss everything together until the pasta is fully coated in the creamy sauce.
Serve immediately.
Notes
For a healthier option, substitute half-and-half for heavy cream.
You can add other vegetables like mushrooms or bell peppers with the onion.
