  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 tablespoon shawarma spice mix
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 4 large pita breads
  • For the Garlic Sauce:
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional toppings: chopped tomatoes, sliced cucumbers, shredded lettuce, pickled turnips

Instructions

  1. In a bowl, combine chicken pieces with olive oil, shawarma spice mix, cumin, paprika, turmeric, cayenne pepper (if using), salt, and pepper. Toss to coat evenly.
  2. Heat a large skillet or grill pan over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and lightly browned.
  3. While the chicken is cooking, prepare the garlic sauce. In a small bowl, whisk together mayonnaise, Greek yogurt, minced garlic, lemon juice, salt, and pepper until smooth.
  4. Warm the pita breads in a dry skillet or microwave until soft and pliable.
  5. To assemble the wraps, spread a generous amount of garlic sauce onto each pita bread.
  6. Top with cooked chicken and your desired toppings like tomatoes, cucumbers, lettuce, and pickled turnips.
  7. Fold or roll the pita bread to create your shawarma wrap.
  8. Serve immediately and enjoy your delicious homemade chicken shawarma!

Notes

  • You can adjust the spice level by adding more or less cayenne pepper.
  • If you don’t have shawarma spice mix, you can create your own with equal parts cumin, coriander, paprika, turmeric, and a pinch of cinnamon and cloves.
  • For a lighter sauce, use all Greek yogurt instead of mayonnaise.
