Make these easy chicken tacos fast for a flavorful weeknight dinner. The chicken shreds easily and stays juicy, perfect for taco night.

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 (10 oz) can diced tomatoes with green chiles, undrained
  • 1 packet (1 oz) taco seasoning mix
  • 1/2 cup water
  • 12 small corn or flour tortillas
  • Toppings: chopped onion, fresh cilantro, lime wedges, salsa

Instructions

  1. Place the chicken breasts in a large skillet or Dutch oven.
  2. Pour the chicken broth, diced tomatoes with green chiles, taco seasoning, and water over the chicken.
  3. Bring the mixture to a simmer over medium-high heat.
  4. Reduce the heat to low, cover the skillet, and let it simmer for 20 to 25 minutes, or until the chicken is cooked through and tender.
  5. Remove the chicken breasts from the skillet and place them on a cutting board. Use two forks to shred the chicken completely.
  6. Return the shredded chicken to the skillet and stir it into the remaining sauce until it is fully coated and heated through.
  7. Warm your tortillas according to package directions (a quick warm in a dry skillet works well).
  8. Fill each warm tortilla with the shredded chicken taco filling.
  9. Top your chicken tacos with fresh onion, cilantro, and serve immediately with lime wedges and salsa.

Notes

  • For extra flavor, use half chicken broth and half orange juice in the simmering liquid.
  • You can use this shredded chicken filling for bowls or nachos later in the week.
  • If you prefer a slow cooker chicken tacos method, cook on low for 4 hours or high for 2 hours.
