  • 1.5 lbs boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1 cup long-grain white rice
  • 2 cups water
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup lime juice
  • Your favorite burrito bowl toppings (e.g., shredded lettuce, salsa, sour cream, guacamole, shredded cheese)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper.
  3. Add chicken thighs to the bowl and toss to coat evenly with the spice mixture.
  4. Place the seasoned chicken on a baking sheet and bake for 20-25 minutes, or until cooked through and no longer pink in the center.
  5. While the chicken bakes, cook the rice according to package directions.
