Make a rich, creamy, no-bake triple chocolate cheesecake featuring a crunchy Oreo crust and a smooth chocolate ganache topping.

Ingredients

  • 1 3/4 cups Oreo cookie crumbs
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup heavy cream, cold
  • 1 teaspoon vanilla extract
  • 4 ounces unsweetened chocolate, melted and cooled slightly
  • 4 ounces milk chocolate, finely chopped
  • 4 ounces white chocolate, finely chopped
  • 1/2 cup heavy cream, for ganache
  • 4 ounces semi-sweet chocolate, for ganache

Instructions

  1. Combine the Oreo crumbs and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Chill the crust for 15 minutes.
  2. In a large bowl, beat the softened cream cheese and granulated sugar until smooth.
  3. Pour in the 1/2 cup of cold heavy cream and vanilla extract. Beat until the mixture thickens slightly.
  4. Gently fold in the melted unsweetened chocolate, chopped milk chocolate, and chopped white chocolate until just combined. Do not overmix.
  5. Spread the cheesecake filling evenly over the chilled crust. Cover the pan loosely with plastic wrap.
  6. Refrigerate the cheesecake for at least 6 hours, or preferably overnight, until firm.
  7. To make the ganache, heat the remaining 1/2 cup of heavy cream in a small saucepan until simmering. Remove from heat and pour over the semi-sweet chocolate in a heatproof bowl. Let stand for 5 minutes, then whisk until smooth.
  8. Let the ganache cool slightly until it reaches a drizzling consistency. Pour or drizzle the ganache over the top of the chilled cheesecake.
  9. Return the cheesecake to the refrigerator for 30 minutes to set the ganache before slicing and serving.

Notes

  • Use good quality chocolate for the best flavor in this dessert.
  • If you prefer a baked version, bake at 325F for 50-60 minutes and use a water bath.
  • For a cleaner slice, dip your knife in hot water and wipe it dry between cuts.
