1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1/2 cup packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
1 cup mashed ripe bananas (about 2-3 medium bananas)
1/2 cup milk
1 cup chocolate chips (plus extra for topping)
Instructions
Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
In a medium bowl, whisk together the flour, baking soda, and salt. Set this aside.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Mix in the mashed bananas until just combined.
Alternate adding the dry ingredients and the milk to the wet ingredients, beginning and ending with the dry mixture. Mix only until the batter is just combined. Do not overmix.
Gently fold in the chocolate chips.
Divide the batter evenly among the 12 muffin cups. Sprinkle a few extra chocolate chips on top of each muffin.
Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
Use very ripe bananas; the browner the peel, the sweeter and moister your muffins will be.
For extra moisture, you can substitute buttermilk for regular milk.
To achieve a beautiful dome top, make sure your oven temperature is accurate and do not overfill the liners.
