1 cup grated zucchini, well-drained
1 cup chocolate chips
Instructions
Preheat your oven to 375°F (190°C). Grease and flour a 12-cup muffin tin or line it with paper liners.
In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Gently fold in the grated zucchini and chocolate chips. Ensure the chocolate chips are evenly distributed.
Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
Ensure your grated zucchini is well-drained to prevent soggy muffins. Squeeze out as much moisture as possible.
For best results, use fresh zucchini.
You can add a sprinkle of turbinado sugar on top before baking for a little crunch.
