  • 1/4 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)
  • 8 ounces semi-sweet chocolate, chopped (for dipping)
  • 1 tablespoon coconut oil or vegetable oil (optional, for smooth dipping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and 1 1/2 cups granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. In a shallow dish, combine the 1/4 cup granulated sugar and the ground cinnamon for the coating.
  7. Roll rounded tablespoons of cookie dough into balls.
  8. Roll each dough ball in the cinnamon-sugar mixture to coat evenly.
  9. Place the coated dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
  10. Bake for 10-12 minutes, or until the edges are lightly golden.
  11. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  12. While the cookies are cooling, melt the chopped semi-sweet chocolate. You can do this in a double boiler or in the microwave in 30-second intervals, stirring between each. Stir in the coconut oil if using for a smoother consistency.
  13. Dip the cooled cookies halfway into the melted chocolate.
  14. Place the dipped cookies back onto the parchment-lined baking sheets to allow the chocolate to set.
