1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 scoop (about 30g) chocolate protein powder
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup granulated sugar
1/4 cup unsweetened applesauce
1/4 cup vegetable oil
1 cup milk
1 teaspoon vanilla extract
1/2 cup chocolate chips (optional)
Instructions
Preheat your oven to 350°F (175°C). Grease or line a 12-cup muffin tin.
In a large bowl, whisk together the flour, cocoa powder, protein powder, baking soda, baking powder, and salt.
In a separate bowl, whisk together the sugar, applesauce, vegetable oil, milk, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
Gently fold in the chocolate chips, if using.
Divide the batter evenly among the muffin cups, filling each about two-thirds full.
Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
For a deeper chocolate flavor, use dark cocoa powder.
Adjust the sugar to your preference; you can also use a sugar substitute.
If your protein powder is unsweetened, you may need to add a bit more sweetener.
These muffins can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
