Chocolate Pumpkin Overnight Oats combine the rich flavors of pumpkin and chocolate for a healthy, dessert-like breakfast. This easy, make-ahead recipe is satisfying and decadent.

Ingredients

Scale
  • 1/2 cup rolled oats
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup pumpkin puree
  • 1 tablespoon unsweetened cocoa powder
  • 1-2 tablespoons maple syrup or honey (to taste)
  • 1/2 teaspoon pumpkin pie spice
  • Pinch of salt
  • Optional toppings: chocolate chips, nuts, seeds, whipped cream

Instructions

  1. In a jar or container, combine rolled oats, milk, pumpkin puree, cocoa powder, maple syrup or honey, pumpkin pie spice, and salt.
  2. Stir well to ensure all ingredients are fully combined and there are no lumps of cocoa powder.
  3. Cover the jar or container and refrigerate for at least 4 hours, or preferably overnight.
  4. In the morning, stir the oats. If too thick, add a splash more milk to reach desired consistency.
  5. Add your favorite toppings and enjoy your chocolate pumpkin overnight oats.

Notes

  • Adjust the sweetness to your liking.
  • For a thicker consistency, use less milk; for a thinner consistency, add more.
  • You can prepare multiple jars at once for quick breakfasts throughout the week.
