Instructions

  1. Prepare the crust: Mix graham cracker crumbs and melted butter until combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Chill while you prepare the filling.
  2. Beat the cream cheese in a large bowl until smooth. Add the powdered sugar and vanilla extract, beating until fully incorporated.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined. Do not overmix.
