- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg (optional)
- 1 tablespoon lemon juice (optional, to prevent browning)
- Preheat your oven to 225°F (107°C). Line a baking sheet with parchment paper.
- Wash and core the apples. You can peel them if you prefer, but leaving the skin on adds nutrients and texture.
- Slice the apples very thinly, about 1/16 to 1/8 inch thick. A mandoline slicer works best for uniform slices, but a sharp knife will also do.
- In a small bowl, mix the cinnamon and nutmeg (if using).
- If you’re using lemon juice, lightly brush it onto both sides of the apple slices.
- Arrange the apple slices in a single layer on the prepared baking sheet.
- Sprinkle the cinnamon-sugar mixture evenly over the apple slices.
- Bake for 1 to 2 hours, flipping the slices halfway through. The baking time will vary depending on the thickness of your slices and your oven.
- Continue baking until the chips are dry and crisp. They should not feel sticky.
- Turn off the oven and let the chips cool completely inside the oven with the door slightly ajar. This helps them crisp up further.
