For the Streusel Topping:
1/2 cup all-purpose flour
1/4 cup packed brown sugar
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/4 cup cold unsalted butter, cut into small pieces
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
In a large bowl, beat the eggs, granulated sugar, vegetable oil, applesauce, and vanilla extract until well combined.
Stir in the grated zucchini.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Pour the batter into the prepared loaf pan.
To make the streusel topping, combine the flour, brown sugar, granulated sugar, and cinnamon in a small bowl.
Cut in the cold butter with a pastry blender or your fingertips until the mixture resembles coarse crumbs.
Sprinkle the streusel topping evenly over the batter in the loaf pan.
Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
