Bake classic cinnamon French toast flavors in a convenient muffin tin for a grab-and-go breakfast or sweet snack.

  • 6 cups cubed day-old bread (about 6 slices)
  • 4 large eggs
  • 1 cup milk
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup melted butter, divided
  • 1/4 cup brown sugar
  • 1 tablespoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Grease a standard 12-cup muffin tin or line it with paper liners.
  2. Place the cubed bread into a large bowl.
  3. In a separate bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, 1 teaspoon of cinnamon, baking powder, and salt until well combined.
  4. Pour the egg mixture over the bread cubes. Gently toss to coat all the bread pieces. Let the mixture sit for 5 minutes so the bread absorbs the liquid.
  5. Stir 2 tablespoons of the melted butter into the soaked bread mixture.
  6. Spoon the bread mixture evenly into the prepared muffin cups, pressing down slightly to fit about 3/4 full.
  7. In a small bowl, combine the brown sugar and the remaining 1 tablespoon of cinnamon. Mix in the remaining 2 tablespoons of melted butter until crumbly.
  8. Sprinkle the cinnamon sugar topping evenly over the top of each muffin cup.
  9. Bake for 18 to 22 minutes, or until the muffins are set and the tops are golden brown.
  10. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Use bread that is slightly stale or dry, like challah, brioche, or thick-cut white bread, for the best texture.
  • These muffins freeze well. Cool them completely, place them in an airtight container, and freeze for up to one month. Reheat in a microwave or toaster oven.
  • For a richer flavor, substitute half of the milk with heavy cream.
