Ingredients
Scale
2 cups pecan halves
2 tablespoons unsalted butter, melted
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/4 teaspoon vanilla extract
Instructions
Preheat your oven to 325 degrees Fahrenheit. Line a baking sheet with parchment paper.
In a medium bowl, toss the pecan halves with the melted butter until they are evenly coated.
In a small bowl, whisk together the granulated sugar and ground cinnamon.
Pour the sugar and cinnamon mixture over the buttered pecans. Add the vanilla extract. Toss everything together until the pecans are well coated.
Spread the coated pecans in a single layer on the prepared baking sheet. Do not let them overlap.
Bake for 12 to 15 minutes, stirring halfway through the baking time.
Remove the pecans from the oven. Let them cool completely on the baking sheet; they will crisp up as they cool.
Store cooled pecans in an airtight container.
Notes
For extra crunch, you can briefly toast the sugar and cinnamon mixture in a dry pan for 30 seconds before adding it to the buttered nuts.
If you prefer a slightly saltier flavor, add a small pinch of salt to the sugar and cinnamon mixture.
These pecans stay crisp for up to one week when stored properly.
